They're fudgy and chocolatey, and totally hit the spot when you're wanting a treat without the blood sugar spike.
Preheat oven to 350 F.
Ingredients:
1 (15 oz.) can of unseasoned black beans, drained and rinsed
2 Tbsp cocoa powder
1/2 cup oats
1/4 tsp salt
1/2 cup maple syrup or honey
1/4 cup coconut oil
2 tsp vanilla
1/2 tsp baking powder
1/2-2/3 cup (or a hefty handful) sugar-free chocolate chips from ChocZero
In a food processor or blender, add all ingredients except the chocolate chips. Blend until mostly smooth. It's fine if the oats don't break down all the way--the main concern is the beans.
Stir in the chocolate chips, then pour into a greased 8x8 pan.
Bake at 350 F for 15-18 minutes.
Once cooled, store in an airtight container and refrigerate.
