1 ounce of freshly dehydrated "Victory" sourdough starter.
Starter is dry when it is shipped.
Directions for rehydrating:
In a clean mason jar, combine 1 oz. dehydrated starter, 1 oz. flour, and 2 oz. water. Mix to combine, then cover with a breathable covering, such as a coffee filter held by a rubber band. Let it sit at room temperature for two days.
On the second day, feed it another ounce of water and an ounce of flour. Mix to combine, cover, and let sit for another two days.
Repeat the process until you start seeing bubbles throughout. You may also notice a rise line on the jar from where the starter rose and fell. These are signs of life! In 5-7 days, your starter should be fully reactivated.
